The Harvesting Process

Each night, after the flowers are collected, the fields of Kozani look empty. However, each morning they return to purple, once again filled with the beautiful krocus flowers. This cycle continues for around 20 days, until the blooming of krocus comes to its end. During this time, families separate the stamens from the sigmas, before the flowers turn dry.

After harvest, stigmas are dried out. This demanding procedure requires a great deal of skill, to ensure none of the valuable properties of the stimas are lost. For the following three months, throughout winter when the nights are long, the women of the family gather around a table and patiently sort the yellow stamens from the red stigmas.
